  • 8 large potatoes (with or without skins)
  • 1 lb. Velveeta cheese, cubed
  • 1/2 c. onion, chopped
  • 1/2 lb. bacon (do not fry), chopped
  • 1 c. mayonnaise
  • season to taste

Directions

    Boil potatoes; cut into cubes.

    Cube Velveeta cheese; chop onion and bacon.

    Mix potatoes, cheese, onion and bacon with mayonnaise and season to taste.

    Put in casserole dish.

    Bake 1 hour at 350°.

    Can be prepared ahead and baked when ready to serve.
