- 8 large potatoes (with or without skins)
- 1 lb. Velveeta cheese, cubed
- 1/2 c. onion, chopped
- 1/2 lb. bacon (do not fry), chopped
- 1 c. mayonnaise
- season to taste
Directions

1Boil potatoes; cut into cubes.

2Cube Velveeta cheese; chop onion and bacon.

3Mix potatoes, cheese, onion and bacon with mayonnaise and season to taste.

4Put in casserole dish.

5Bake 1 hour at 350°.

6Can be prepared ahead and baked when ready to serve.
