- 1/2 cup dry breadcrumbs
- 1/2 cup grated parmesan cheese
- 3/4 teaspoon salt
- 3/4 teaspoon paprika
- 4 pork shoulder chops (butt)
- 2 tablespoons flour
- 1 egg, beaten
- 2 tablespoons lard or 2 tablespoons drippings
- 1 medium onion, chopped
- 1 (14 ounce) can tomato sauce
- 1/4 teaspoon oregano
- 4 ounces sliced mozzarella cheese
Directions

1Mix crumbs, parmesan cheese, salt and paprkia.

2Dredge chops with flour.

3Dip in egg.

4Coat with crumb mixture.

5Heat lard in large frying pan.

6Brown chops on both sides.

7Place in shallow 8 inch square or round baking dish.

8Add onion to frying pan.

9Saute until golden.

10Stir in tomato sauce and oregano.

11Cover each chop with a slice of mozzarella cheese.

12Pour tomato mixture over cheese.

13Bake 375 40 minutes.
