- 1 cup short-grain rice
- 1 cup plus 2 tablespoons cold water
Directions

1Rinse or wash: 1 cup short-grain rice

2Drain well and put into a heavy saucepan with: 1 cup plus 2 tablespoons cold water

3Cover and bring to a boil over medium-high heat.

4Immediately turn the heat down to low and cook until all the water is absorbed, about 15 minutes.

5Turn off the heat and let rest, still covered, for another 10 minutes.

6Fluff and serve.

7Add a pinch of salt and 1 teaspoon butter or olive oil to the pot before cooking.

8For long-grain rice, wash well, and increase the water to 1 1/2 cups.

9For brown rice, increase the water to 2 cups and the cooking time to 40 minutes.
