- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion (chopped)
- 1 cup Arborio rice
- 1/2 cup white wine or dry vermouth
- 4 cups chicken or vegetable broth
- 1/2 cup grated parmesan cheese
- fresh chopped parsley
Directions

1Heat olive oil and butter in a saucepan on medium high heat. Add onion and saut until soft.

2Add rice and saut until rice is coated.

3Add white wine or vermouth and stir until all the liquid is absorbed.

4Add hot broth 1/2 cup at a time, until it is all absorbed in the rice and rice is tender.

5Add hot water if more liquid is needed.

6Stir in parmesan cheese and fresh parsley, and serve warm.
