- 3 firm but ripe plantains
- 2 tbsp chopped chive
- 1 tbsp chopped parsley
- 2 clove garlic (grated)
- 2 tbsp olive oil
- 2 tbsp butter
Directions

1Boil plantains until tender --about 10 to 15 minutes

2Drain ,peel and mash with a potato masher.

3Add the chive, parsley , garlic , salt and pepper to taste

4Form into patties .

5The starch in the plantains hold the patties together .As an alternative you can make small appetizer balls
-
6Add oil and butter in a pan --under moderate heat fry patties until golden brown .

7These can be served with any grilled , baked , fried meat as an alternative to potatoes.

8Note--you can also melt the butter mixed with the oil --brush both sides of these patties and grill or bake them
