Plantation Pecan Pie

- 1/4 c. butter (not margarine)
- 1 c. firmly packed dark brown sugar
- 1 c. light corn syrup
- 1 Tbsp. evaporated milk or cream
- 1/4 tsp. salt
- 3 large eggs at room temperature
- 2 Tbsp. vanilla extract
- 1 1/2 c. broken pecan pieces
- 1 (9-inch) pie shell, unbaked
Directions

1Cream butter and gradually add sugar.

2Add syrup and evaporated milk.

3In a separate bowl, add salt to eggs and beat until light.

4Stir well into first mixture.

5Add vanilla and pecans.

6Use 1 cup nuts for halves, 1 1/2 cups if using broken pieces.

7Pour into pie shell. Bake in preheated oven at 400° for 10 minutes.

8Lower heat to 350° and bake for 35 to 40 minutes or until knife inserted in center comes out clean.
