Plum Nut Bread

Ingredients

  • 2 c. sugar
  • 1 c. oil
  • 3 eggs, beaten
  • 1 jar junior size baby food (plum with tapioca)
  • 2 1/2 c. flour + 1 Tbsp.
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. ground cloves
  • 1 c. buttermilk
  • 2 tsp. baking soda
  • 1/2 c. chopped walnuts

Directions

    Combine sugar, oil and eggs.

    Mix until smooth and add the plums with tapioca.

    Combine flour, cinnamon, salt and ground cloves.

    Gradually add to moist batter and beat until well blended (3 minutes).

    Add the baking soda to the buttermilk and stir. Gradually add to the batter and stir in walnuts.

    Bake at 350° for 45 minutes.

    Bake in 8 1/2 x 4 1/2 x 2 1/2-inch pans that have been sprayed with Pam.
