- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 12 plums, halved and pitted
- 2 tablespoons sugar (more or less)
- 1 tablespoon cinnamon
Directions

1Grease and flour a 9-inch springform pan.

2Preheat oven to 350C.

3Cream 1 cup sugar and butter together; beat in eggs and vanilla.

4Sift dry ingredients and stir into batter.

5Spoon into prepared pan.

6Place plum halves, skin side up, on batter.

7Sprinkle with 2 tablespoons sugar and cinnamon, adjusting to tartness of the fruit.

8Bake for 1 hour.

9Best served warm with vanilla ice cream.

10This is also best served the day of baking as the moisture of the fruit can seep into dough and affect the texture of the tart; it still tastes great, though!
