- 2 pounds small oval purple plums, pitted and thinly sliced
- 2 tablespoons sugar
- Grated zest of 1 lemon
- 1/2 vanilla bean, seeds scraped
- Vanilla ice cream, creme fraiche or yogurt sorbet, for serving
Directions

1In a medium saucepan, combine plums, sugar, lemon zest, vanilla seeds and 2 tablespoons water.

2Place over medium heat, stirring occasionally, until plums give up their juice and soften, 5 to 10 minutes.

3Taste, and adjust seasoning, adding more sugar, lemon zest or vanilla if desired.

4Let cool 20 minutes.

5Serve with ice cream, creme fraiche or yogurt sorbet.
