- 1 c. yellow cornmeal
- 2 tsp. salt
- 1 lb. extended ground beef
- 1/3 c. chopped onion
- 2 cloves garlic, crushed
- 1 (6 oz.) can tomato paste
- 1 (1 lb.) can tomatoes
- 1 tsp. sugar
- 1/2 tsp. oregano leaves
- dash of pepper
- 1/2 c. finely shredded sharp Cheddar cheese
Directions

1Mix 1 cup cold water, the cornmeal and 1 teaspoon salt in a bowl.

2Bring 2 1/2 cups water to a boil in heavy saucepan.

3Stir in cornmeal mixture and bring again to a boil, stirring until thickened.

4Cover and simmer, stirring occasionally, about 5 minutes.

5Pour into lightly oiled 8-inch square pan and chill several hours, overnight or until firm.
