1Gather polk greens in spring of year.

2Look and wash well. Parboil greens; rinse.

3Boil again.

4Put 2 tablespoons of soda in water, rinse well.

5Squeeze out all the water you can.

6Put greens and cut up onion in skillet with fair amount of Crisco.

7Cook until onion is translucent.

8I like to scramble 3 or 4 eggs, then mix with cooked greens.
