- shake or two of red pepper
Directions

1Cook chicken in olive oil in a deep heavy pot, cast-iron is best, 15 to 20 minutes, turning.

2Sprinkle remaining ingredients over chicken.

3Cover; turn down heat to a strong simmer.

4Cook another 45 to 60 minutes until chicken is very tender.

5Serve chicken on the side, with broth in a bowl.

6Sprinkle broth with basil or serve together in a large soup bowl.
