- 2 c. flour, sifted
- 1 c. vegetable oil
- 2 c. sugar
- 3 eggs
- 2 tsp. cinnamon
- 1 c. ground nuts
- 1 jar (small) mashed baby food carrots
- 1 small can crushed pineapple, drained
- 2 tsp. baking soda
- 2 tsp. vanilla
- 1 c. coconut
- 1 tsp. salt
Directions

1Combine all the dry ingredients.

2Combine all the wet ingredients.

3Mix together, alternately adding dry and wet ingredients. Pour batter into large tube pan (10-inch).

4Bake for 50 to 60 minutes.

5(Might need 5 or 10 minutes more.)

6Check with cake tester.

7Bake at 350°.
