- 3 1/2 lb. chicken
- white wine
- 3 Tbsp. margarine
- 1 large onion, quartered
- 1 green pepper
- 1 (No. 2 1/2) can sliced peaches
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 3 Tbsp. vinegar
- 2 tomatoes
Directions

1Steam chicken in white wine until comes off bones easily. Drain and remove skin and bones.

2Place it in a large casserole. Set aside.

3Separate the onion quarters into thin layers and saute with green pepper sliced into 1-inch strips in butter until onion is transparent.

4Drain peaches, reserving syrup.

5Mix 1 cup syrup with cornstarch, soy sauce and vinegar.

6Heat in a skillet until sauce is clear and thickened. Stir in the peaches and tomatoes. Pour the peach-tomato sauce over the chicken in the casserole. Cover and bake at 375° for about 20 minutes.

7Remove cover for the last 5 minutes of baking.
