  • 1 (12 oz.) jar apricot preserves
  • 2 Tbsp. soy sauce
  • 1/4 tsp. garlic powder
  • 1 yellow pepper, cubed
  • 1 medium pineapple, pared and cut into 1-inch chunks
  • 1/2 c. red wine vinegar
  • 1 tsp. to 1 Tbsp. ginger
  • 1 green pepper (cubes)
  • 2 tomatoes, cut into wedges

Directions

    In skillet, combine preserves, vinegar, soy sauce, ginger, garlic powder and 3/4 teaspoon salt.

    Add peppers and onions. Cover and cook (stirring occasionally) until vegetables are tender but crisp.

    Add tomatoes and pineapple.

    Heat through and serve.
