- 1 (12 oz.) jar apricot preserves
- 2 Tbsp. soy sauce
- 1/4 tsp. garlic powder
- 1 yellow pepper, cubed
- 1 medium pineapple, pared and cut into 1-inch chunks
- 1/2 c. red wine vinegar
- 1 tsp. to 1 Tbsp. ginger
- 1 green pepper (cubes)
- 2 tomatoes, cut into wedges
Directions

1In skillet, combine preserves, vinegar, soy sauce, ginger, garlic powder and 3/4 teaspoon salt.

2Add peppers and onions. Cover and cook (stirring occasionally) until vegetables are tender but crisp.

3Add tomatoes and pineapple.

4Heat through and serve.
