"Popeye" Chicken

  • 4 whole chicken breasts, cut in halves, cooked and bones removed
  • 2 pkg. frozen chopped spinach, uncooked, thawed and drained
  • 2 cans cream of celery soup (undiluted)
  • 1 c. mayonnaise
  • 1 tsp. curry powder
  • 2 c. crumbled cornflakes
  • 1 pkg. grated cheese (medium Cheddar)
  • butter
  • parsley

Directions

    Butter 9 x 12-inch casserole dish.

    Place spinach in bottom. Put the cut-up chicken on top of spinach.

    Combine soup, mayonnaise and curry powder and mix well.

    Pour over chicken. Cover with a layer of grated cheese.

    Add layer of cornflakes. Dot with butter and parsley.

    Bake at 350° for 40 minutes.

    Can be made earlier but add cornflakes just before baking.
