- 1/4 c. olive oil
- 2 garlic cloves
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 box frozen spinach
- 2 cans black-eye peas
- 2 cans Mexican corn
- 2 cans crushed tomatoes
- salt and pepper to taste
Directions

1Fry garlic in olive oil; add spinach, stirring to separate and unthaw.

2Add onion and green pepper; fry slightly.

3Add black-eyed peas (juice too), corn, crushed tomatoes, salt and pepper; cook, stirring often, about 30 minutes.

4Serve with tortilla chips.
