- 2 eggs
- 1 c. all-purpose flour (do not use self-rising flour in this recipe)
- 1 c. milk
- 1/2 tsp. salt
Directions

1Heat oven to 450°.

2Generously grease six 6-ounce custard cups or 8 medium muffin cups, 2 1/2 x 1 1/4-inches.

3Beat eggs slightly; beat in flour, milk and salt just until smooth (do not overbeat).

4Fill custard cups about 1/2 full, muffin cups about 3/4 full.

5Bake 20 minutes.

6Decrease oven temperature to 350°. Bake custard cups 20 minutes longer, muffin cups 15 minutes longer.

7Immediately remove from cups; serve hot.

8Makes 6 or 8 popovers.
