- 2 large cloves garlic
- 6 flat anchovies, rinsed, patted dry and chopped
- 2 Tbsp. fresh lemon juice
- 3 Tbsp. mayonnaise
- 1/4 tsp. salt (if desired; anchovies give enough salt taste)
- 1/3 c. olive oil
Directions

1In a blender, blend together at high speed garlic, anchovies, lemon juice, mayonnaise and salt until smooth.

2Add olive oil by steady stream at lower speed to blend.

3Add portion of dressing to romaine lettuce and toss until well coated.

4Top with grated Parmesan cheese and croutons.
