  • 2 eggs, beaten
  • 1 c. milk
  • 1 Tbsp. melted butter
  • 1 c. all-purpose flour
  • 1/2 tsp. salt

    Preheat oven to 450°. Grease 8 custard cups. In a small bowl, combine eggs, milk and butter. In another bowl, stir flour and salt together. Make a hole in flour mixture and add egg mixture, stirring just until lumps disappear. Fill custard cups 1/2 full. Bake for 15 minutes. Reduce heat to 325° and bake another 20 minutes. When popovers are done, remove immediately from pan so steam doesn't soften them. Serve hot with butter (and maybe honey?).
