  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1/4 c. poppy seed
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/4 c. milk
  • 1/3 c. vegetable oil
  • 1 egg
  • 1 tsp. vanilla

    Heat oven to 350°.

    Grease bottom only of 9 x 5 x 3-inch loaf pan.

    Mix all ingredients and beat 30 seconds.

    Pour into pan. Bake until wooden toothpick inserted in center comes out clean, 55 to 65 minutes.

    Cool slightly.

    Loosen sides of loaf pan; remove from pan.

    Cool completely before slicing.

    To store, wrap and refrigerate no longer than 1 week.
