Poppy Seed Bread

Ingredients
- 2 extra ripe large bananas
- 1 c. sugar
- 1/2 c. butter
- 2 eggs
- 1 tsp. freshly grated lemon peel
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/4 c. poppy seed
Directions

1Slice bananas into a blender.

2Process until pureed.

3Cream sugar and butter until light and fluffy.

4Beat in eggs and lemon peel until blended.

5Combine flour, baking powder, salt and cinnamon.

6Beat dry ingredients into wet ingredients alternately with the pureed bananas.

7Repeat twice, ending with dry ingredients.

8Stir in poppy seed.

9Pour into a well-greased 9 x 5-inch loaf pan.

10Bake in a 350° oven for 60 to 70 minutes or until a toothpick inserted comes out clean.

11Cool in pan for 10 minutes.

12Remove and place on a wire rack to complete cooling.
