"Porcupine" Meatballs

Ingredients

  • 1 lb. ground lean beef
  • 1/2 c. raw rice
  • 1 tsp. minced onion
  • 2 tsp. finely chopped green pepper
  • 1 tsp. salt
  • 1/2 tsp. celery salt
  • 1 clove garlic, finely chopped or dash of garlic powder
  • 2 c. tomato juice
  • 4 whole cloves
  • 2 Tbsp. sugar
  • 1 Tbsp. Worcestershire sauce

    Combine first 7 ingredients and form into balls 1 1/2 inches in diameter; set aside.

    Combine tomato juice, cloves, sugar

    and Worcestershire sauce in a heavy skillet.

    Bring to a simmer.

    Drop in the meatballs.

    Cover tightly and simmer 50 minutes or place in a baking dish and bake 1 hour at 350°.
