    slice the mushroms thinly and cover the base of an ovenproof rectangular dish

    using a meat tenderiser, beat the pork until fairly thin and lay over the mushrooms.

    ensure there's a single layer and the mushrooms are covered.

    season well with salt and black pepper.

    pour over the double cream.

    Cover with the grated cheese and bake in the centre of the oven for approx 30 minutes or until cheese is bubbling and golden.
