Pork And Spinach Pie

  • 1 (9-inch) deep dish pie shell (unbaked)
  • 1 1/2 c. shredded Monterey Jack or Swiss cheese (6 oz.)
  • 1/2 lb. bulk pork sausage
  • 1/2 c. seasoned stuffing mix
  • 1/2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 3 eggs, beaten
  • 1 1/2 c. milk

Directions

    Place pie shell on baking sheet.

    Bake at 400° for 5 minutes. Remove from oven and reduce heat to 325°.

    Spread cheese on bottom of shell and set aside.

    In a skillet, brown sausage; drain off fat.

    Stir in stuffing mix and spinach; spoon over cheese.

    Beat together eggs and milk and pour over sausage in pie shell.

    Bake, uncovered, at 325° for 50 to 55 minutes until knife inserted near the center comes out clean.

    Let stand 10 minutes before serving.
