- 2 pork chops
- 1 teaspoon herbes de provence
- black pepper, coarsely ground
- salt
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon French mustard
- 1 cup red wine
Directions

1Take care the chops are at room temperature.

2Season them with salt, pepper and herbs.

3Heat oil and butter in a frying pan and when hot, cook the chops to your liking.

4Remove them from the pan and keep warm.

5Put the mustard in the pan, stir well, and then add the wine.

6Bring to the boil and let it reduce a little.

7Serve with roast patatoes and a mixed salad, and a glass of the same wine that went into the sauce.
