Pork Chops With Spanish Rice

  • 4 pork chops
  • 1 Tbsp. oil
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/4 tsp. black pepper
  • 3/4 c. long grain rice
  • 1/2 c. chopped red onions
  • 1 (18 oz.) can whole tomatoes
  • 1/4 c. chopped green bell pepper

    In oven, slowly brown pork chops in heated oil.

    Drain. Sprinkle pork chops with salt, chili powder and black pepper.

    Add rice, onions and green peppers.

    Pour in tomatoes with liquid, breaking the tomatoes into pieces with a wooden spoon.

    Cover and simmer 1 hour at 350°, stirring occasionally.
