Pork Fried Rice

Ingredients
- 2 c. pork meat, finely diced
- 2 medium onions, finely diced
- 2 tsp. garlic cloves
- 3 Tbsp. cooking oil
- 4 c. cooked rice
- 3 eggs, beaten (optional)
- 3 tsp. soy sauce
- 3/4 c. chopped green onion (all of it)
- salt and pepper to taste
Directions

1Heat wok or skillet.

2Add oil; fry half of the onion and garlic until garlic turns slightly brown.

3Add pork; cook until done or 5 minutes, then add rice to the meat.

4Stir thoroughly until mixed and heated through.

5Push rice to side of the wok or skillet.

6Pour in egg mixture.

7Add salt and pepper in the center (if desired).

8Scramble eggs until set; mix with rice and sprinkle soy sauce over the rice.

9Raise heat for 1 minute; remove.

10Add rest of the onion; mix thoroughly.

11Serve hot.
