- 8 thin boneless skinless pork cutlets (about 1-1/2 to 2 pounds total)
- 14 teaspoon salt
- 14 teaspoon black pepper
- 1 cup chicken broth
- 3 tablespoons capers
- 2 tablespoons lemon juice
- 1 tablespoon butter
Directions

1Season both sides of pork with salt and pepper.

2Dredge in flour and shake off excess.

3Discard remaining flour.

4Heat oil in a large skillet over medium-high heat.

5Add pork and saute for 2 minutes per side.

6Remove pork to a plate and keep warm.

7Add broth and simmer 2 minutes, scraping up any browned bits from bottom of skillet.

8Stir in the capers and lemon juice.

9Return the pork to the skillet and simmer gently for about 1 to 2 minutes, until pork is heated through.

10Whisk in the butter.

11Serve Warm.
