Ingredients

  • 281 g pork loin, cubed. Remove as much fat as possible
  • 1 small red onion, chopped
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • 290 g chopped canned tomatoes
  • 12 teaspoon hot italian seasoning

Directions

    Fry onions, carrot and celery in a little oil or spray till softened and colouring.

    Add pork and fry till browned.

    Add tomatoes and Italian seasoning.

    Add stock cube and add enough water to cover contents.
  5. 5
    Bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.

    Serve with rice or polenta or over baked potato.
