- 281 g pork loin, cubed. Remove as much fat as possible
- 1 small red onion, chopped
- 1 medium carrot, chopped
- 1 stalk celery, chopped
- 290 g chopped canned tomatoes
- 12 teaspoon hot italian seasoning
Directions

1Fry onions, carrot and celery in a little oil or spray till softened and colouring.

2Add pork and fry till browned.

3Add tomatoes and Italian seasoning.

4Add stock cube and add enough water to cover contents.

5Bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.

6Serve with rice or polenta or over baked potato.
