  • 1/2 cup carrots diced
  • 1/2 cup celery diced
  • 1 cup onion diced
  • 1/2 cup ginger sliced
  • 1/4 cup scallions sliced
  • 1/4 cup soy sauce
  • 1/4 cup garlic
  • 2 star anise
  • 1 cinnamon stick
  • 1 1/2 gallons chicken stock

    1. Put all ingredients in hotel pan along with pork shoulder and cook in 350F for 3 hours. Chop meat and reserve liquid for service
