- 1 pork ham (10 to 15 lb.) with skin on
- 4 Tbsp. margarine
- 4 Tbsp. flour
- drippings and juice from roast
Directions

1Slice the pork skin with sharp knife in thin slices through the fat.

2Salt all sides of pork.

3Cook at 325° for 40 minutes per pound.

4During cooking, pour cold water over roast several times. When finished cooking, before removing from oven, turn temperature up to 400° to brown the rind; this will also make it crisp.

5Save all the juice and drippings for the gravy.
