- 1 (4 to 5 lb.) pork roast
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. ground cinnamon
- 3 D'Anjou or Bosc pears (1 lb.), peeled and halved
- 2 lb. sweet potatoes, peeled and quartered
- 1/4 c. margarine
- 1/4 c. brown sugar, firmly packed
- 1/2 c. maple syrup
- 1/8 tsp. ground cloves
- 1/8 tsp. nutmeg
- 1 tsp. cornstarch
- 2 Tbsp. water
Directions

1Preheat oven to 350°.

2Sprinkle roast with salt, pepper and cinnamon; rub into meat.

3Place roast on rack in baking pan, fat side up.

4Bake about 3 to 3 1/2 hours (allow 25 minutes per pound).

5Place pears and sweet potatoes around meat; continue baking.

6Spoon off fat.
