  • 1 (4 to 5 lb.) pork roast
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground cinnamon
  • 3 D'Anjou or Bosc pears (1 lb.), peeled and halved
  • 2 lb. sweet potatoes, peeled and quartered
  • 1/4 c. margarine
  • 1/4 c. brown sugar, firmly packed
  • 1/2 c. maple syrup
  • 1/8 tsp. ground cloves
  • 1/8 tsp. nutmeg
  • 1 tsp. cornstarch
  • 2 Tbsp. water

Directions

    Preheat oven to 350°.

    Sprinkle roast with salt, pepper and cinnamon; rub into meat.

    Place roast on rack in baking pan, fat side up.

    Bake about 3 to 3 1/2 hours (allow 25 minutes per pound).

    Place pears and sweet potatoes around meat; continue baking.

    Spoon off fat.
