Pork Stroganoff

  • 1 leek, finely sliced and washed
  • 500g pork fillets or leg steaks, finely sliced Safeway 1 lb For $5.99 thru 02/09
  • 1 1/2 cups sliced button mushrooms
  • 1/2 red capsicum
  • 2 teaspoons VEGEMITE
  • 1 tablespoon tomato paste
  • 1/2 cup sour cream
  • 2 tablespoons chopped parsley
  • cooked penne pasta, for serving

Directions

    Heat a little butter in a frying pan and cook leek until tender.

    Cook pork in small amounts and stir constantly for 1 - 2 minutes until just browned over med-high heat.

    Add button mushrooms and red capsicum and cook a further 2 minutes.

    Stir in combined Vegemite*, tomato paste, sour cream and chopped parsley.

    Heat gently, but do not boil.

    Serve immediately with pasta.
