- 1 kg pork or 1 kg mutton, cut into pieces
- 5 tablespoons oil
- 1 inch ginger, sliced
- 8 garlic cloves, sliced
- 2 medium onions, sliced
- to taste salt
- 1 teaspoon cumin seed
- 2 teaspoons mustard
- 1 teaspoon turmeric powder
- 2 red chilies
- 4 cardamom pods (optional)
- 10 garlic cloves
- 2 inches ginger
- 2 inches cinnamon sticks
- 12 cup vinegar

4Grind all spices in vinegar for the marinade.

5Marinate the meat in spice solution and salt.

7Heat oil, add sliced onions, ginger and garlic and saute till onions are soft and translucent.

8Then add meat and marinade and cook on a slow fire in a tightly covered vessel till meat is tender.
