  • 1 large onion, sliced
  • 3 tablespoons olive oil
  • 2 bay leaves
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1/2 teaspoon allspice
  • 1 large can diced tomatoes
  • 1 tablespoon chopped parsley
  • 1 cup dry white wine
  • 3/4 cup water with lemon juice to make 1 cup
  • 1/2 teaspoon salt
  • 2 pounds fish 1/2 to 3/4 thick fillets
  • 4 lemon wedges

Directions

    In large frying pan saute onion in oil until soft; add bay leaves, garlic, tomatoes, parsley,wine, and salt. Simmer slowly uncovered.

    Place fish in the pan and spoon the mixture over the fish until fish is cooked. Place fish on serving platter.

    Cook tomato mixture until bubbly and pour over fish. Garnish with lemon wedges.
