- 2 c. Posoli (hominy)
- 6 c. water
- 3 lb. pork
- 1 lb. pig's feet (optional)
- 3 Tbsp. red chile or 5 chile pods
- 1 small chopped onion
- 2 cloves garlic, mashed
- 2 tsp. each: salt and oregano
Directions

1Cook Posoli in water to cover until kernels pop.

2Add red chile and pork.

3Bring to boil in covered kettle.

4Simmer until meat is cooked and corn is tender, at least 3 hours, on low.

5Add more water if needed.

6Add onion and seasonings.

7Cook for 1 more hour.
