Ingredients
- 1 (3 to 4 lb.) chuck roast
- 1/4 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. oil
- 2 large onions, sliced
- 1 1/2 c. water
- 6 medium potatoes, quartered
- 6 carrots, cut into 2-inch pieces
Directions

1On waxed paper, combine flour, 1/2 of salt and pepper.

2Coat roast with mixture.

3In Dutch oven, in oil, brown roast evenly on all sides.

4Remove roast from oven.

5Place in oven-safe pot.

6Using Dutch oven, cook onions until tender.

7Place onions on top of roast.

8Add remaining salt and 1 1/4 cups water.

9Cover.

10Bake at 325° for 3 hours.

11Add potatoes and carrots.

12Bake 30 to 45 minutes more, until meat and vegetables are tender.

13Mix 1/4 cup water with flour mixture on top of stove.

14Thicken broth with mixture.

15Pour over meat and vegetables.
