- 3 lb. beef (chuck)
- 1/2 c. bacon dripping
- salt (approximately 1 1/2 Tbsp.)
- pepper
- 4 carrots
- 2 onions
- 4 potatoes
- 1 c. chopped celery
Directions

1Salt meat.

2Roll in flour.

3Brown entire surface in hot fat. Place on rack in Dutch oven.

4Add 3 tablespoons flour to hot fat. Brown.

5Add 3 cups water and 1 teaspoon salt and make a gravy, stirring while it cooks.

6Place roast in Dutch oven.

7Add gravy. Cover with tight fitting lid.

8Simmer until meat is tender.

9Add vegetables and cook about 20 minutes longer.

10Roast may be cooked in pressure saucepan instead of Dutch oven.
