- 6 large potatoes
- 2 eggs
- 1/4 cup flour
- 1/2 cup bread crumbs
- 1/4 teaspoon salt
Directions

1Cook potatoes and mash.

2Place cooled mashed potatoes in a covered bowl in refrigerator overnight.

3Place potatoes in a large bowl.

4Add eggs, flour, bread crumbs, and salt.

5Mix well.

6Roll mixture into balls about 1 1/2 in diameter.

7Using a large sauce pan bring 4 quarts of water to a boil.

8Place balls in boiling water.

9When balls rise to top, about 3 minutes, remove from water. Serve hot.
