- 14 Tbsp. unsalted sweet butter
- 1/4 c. plus 2 Tbsp. dry bread crumbs
- 5 lb. baking potatoes, peeled
- 2 c. milk
- 1/2 c. flour
- 1 c. (4 oz.) Parmesan cheese, grated
- 6 oz. Prosciutto, finely chopped
Directions

1Preheat oven to 350°.

2Prepare a 10-inch spring-form pan by greasing with 1 tablespoon of the butter.

3Sprinkle with 1/4 cup of the bread crumbs to coat.

4In a large pot of boiling salted water, cook the potatoes until just easily pierced with a knife, about 20 minutes.

5Drain immediately.

6In large bowl, mash the potatoes, blending in 8 tablespoons of the butter.

7Keep the potatoes light and fluffy.

8In a saucepan, heat the milk just to simmering.
