- 2 eggs, well beaten
- 1/4 c. milk
- 2 Tbsp. flour
- 1 tsp. salt
- dash of pepper
Directions

1Cover potatoes with very hot water; let stand 5 minutes. Drain potatoes on paper towels.

2Mix all ingredients; drop by tablespoonfuls onto hot well-greased griddle.

3Cook 3 minutes on each side until brown.
