Potato Casserole

  • 3 lb. potatoes
  • 1 c. jack cheese, shredded
  • 1 c. cheddar cheese, shredded
  • 1 pt. sour cream
  • 1 can cream of chicken soup
  • 1/4 c. butter, melted
  • 2 green onions, diced
  • Salt and pepper to taste

Directions

    Cook potatoes whole with skins on in salted water until not quite done.

    Remove skins.

    Grate coarsely on the large section of the grater.

    Mix all other ingredients together, then add the grated potatoes.

    Place mixture in large casserole dish.

    Cover and bake 30 minutes at 350° or until hot.

    Serves 6 to 8.
