  • 2 potatoes (skin on), washed and sliced thin
  • 1/2 onion, sliced thin
  • 2 carrots, peeled and sliced thin
  • 1/4 c. nonfat cream cheese
  • 1/2 c. skim milk
  • pepper to taste

Directions

    Place potatoes, onions and carrots in shallow, large baking dish.

    Blend cream cheese and milk in a blender.

    Pour over potatoes.

    Grind black pepper on top.

    Bake, covered, at 375° for 45 minutes or until potatoes are tender.
