Potato Casserole(Serves 8 To 10)

- 8 medium potatoes
- 1 bay leaf
- 1/2 cube margarine
- 1 can cream of chicken soup
- 1 1/2 c. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 green onions, chopped
- 2 c. grated sharp cheese
- 1/2 c. crushed cornflakes
Directions

1Preheat oven to 350°.

2Cook potatoes in jackets with bay leaf in boiling salted water until barely tender.

3Cool, peel and grate.

4Add butter to soup.

5Stir until smooth.

6Blend in sour cream, salt, pepper, green onions and 1 1/2 cups cheese.

7Pour over potatoes.

8Mix gently until blended.

9Spoon onto casserole. Bake, uncovered, in 350° oven for 30 minutes.

10Combine remaining cheese with cornflake crumbs and sprinkle over casserole.

11Bake 10 to 15 minutes.
