  • 2 c. finely diced potatoes
  • 1 c. finely diced celery
  • 1/4 c. finely diced onions
  • 2 c. broth or stock
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. milk
  • 1 1/2 Tbsp. cornstarch
  • butter
  • grated cheese

Directions

    Combine potatoes, celery, onions, chicken stock, salt and pepper.

    Cover and cook until tender, about 15 minutes.

    Mix cornstarch with milk and add to vegetables.

    Heat to just short of boiling.

    Ladle into individual serving bowls.

    Top each with a pat of butter and a sprinkling of grated cheese.
