Ingredients
- 4 lb. unpared potatoes, cooked and drained
- 1 c. chopped onion
- 1/4 c. butter
- 1 can cream of celery soup
- 1 pt. sour cream
- 1 1/2 c. shredded Cheddar cheese
- 1/2 c. crushed cornflakes
- 3 Tbsp. melted butter
Directions

1Remove skins from cooked potatoes.

2Shred in bowl.

3Saute onion in 1/4 cup butter until tender.

4Remove from heat.

5Stir in soup and sour cream.

6Pour over potatoes and cheese, mix well. Turn into 9 x 13-inch baking dish.

7Cover and refrigerate overnight.

8Sprinkle with cornflakes, drizzle with 3 tablespoons melted butter.

9Bake at 350° for 1 hour.

10Can be made ahead and frozen until needed.
