- 2 lb. potatoes
- 6 strips bacon, diced
- 1/2 c. onion, chopped
- 3/4 c. celery, diced
- 2 carrots, diced
- 1 1/2 c. water
- 1 chicken bouillon cube
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 3 c. milk
- 2 Tbsp. flour
- 2 Tbsp. butter, melted
Directions

1Peel and dice potatoes.

2In a large skillet, saute bacon with onion.

3Add potatoes, celery, carrots, water, bouillon and seasonings. Cover and cook until vegetables are tender.

4Add warmed milk and continue cooking. Mix flour in butter and whisk into soup mixture. Cook until desired thickness. Makes 2 quarts.
