Potato Chowder

  • 2 lb. potatoes
  • 6 strips bacon, diced
  • 1/2 c. onion, chopped
  • 3/4 c. celery, diced
  • 2 carrots, diced
  • 1 1/2 c. water
  • 1 chicken bouillon cube
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. thyme
  • 3 c. milk
  • 2 Tbsp. flour
  • 2 Tbsp. butter, melted

Directions

    Peel and dice potatoes.

    In a large skillet, saute bacon with onion.

    Add potatoes, celery, carrots, water, bouillon and seasonings. Cover and cook until vegetables are tender.

    Add warmed milk and continue cooking. Mix flour in butter and whisk into soup mixture. Cook until desired thickness. Makes 2 quarts.
