Potato Curry

Ingredients

  • 2 1/4 c. potato
  • 1 c. tomato
  • 1 tsp. garlic paste
  • 1/2 tsp. turmeric
  • 1 tsp. coriander leaves
  • 1/2 c. oil
  • 3 medium onions
  • 1 tsp. ginger paste
  • 1 tsp. coriander powder
  • 1 tsp. chili powder
  • 2 tsp. spiced salt to taste

Directions

    Fry chopped onion until light brown and add ginger paste, garlic paste, red chili powder and turmeric and fry for a few minutes.

    Add one cup of water and salt and stir for a minute until onion becomes tender.

    Add chopped tomatoes and cook until a thin gravy is formed.

    Add potatoes (peeled and cut into big pieces) and fry for 10 minutes.

    Add coriander powder.

    Add 3 cups more water and cook on a low fire until tender.

    Remove from the fire and sprinkle chopped coriander leaves and serve hot along with puri. Serves 8.
