- 3 cups heavy cream
- 1/2 cup beef broth
- 3 cloves garlic crushed
- 1 tablespoon fresh thyme leaves chopped
- 1 bay leaf
- 3 pounds baking potatoes small, peeled and cut into 1/8 inch-thick slices
- fresh chives to garnish
Directions

1Preheat oven to 375°F. Butter a 2 quart circular baking dish.

2In a large frying pan, combine heavy cream, broth, garlic, thyme and bay leaves over medium heat. Simmer for 15 mins. Season. Add potatoes to pan and simmer until potatoes are translucent and liquid thickens. Arrange potatoes in baking dish then pour cream mixture over top. Bake for 30-40 mins, or until golden brown. Garnish with chives.
